How to freeze zucchini
Zucchini is a summer squash with a short shelf life. One of the easiest ways to preserve zucchini is to freeze it. But before you put it in the freezer, you need to blanch it.
Blanching is the process of immersing vegetables, fruit, and nuts in boiling water for a brief time and then immediately plunging them into ice water to stop the cooking process.
Blanching stops enzyme actions that cause loss of flavor, color, and texture. Blanching also cleanses the surface of dirt and organisms, brightens the color, and helps slow vitamin loss. It can speed up the freezing process by destroying tissue structure, making it easier for water to flow from the fruit, and reduces the likelihood of large ice crystals forming inside the cells.
To blanch zucchini, you will need a large pot of boiling water, a bowl of ice water, and a colander to drain excess water from the zucchini.
Bring a large pot of water to a rolling boil. Add the zucchini and blanch them for 3 minutes. Remove them from the boiling water and place them in the bowl of ice water.
Remove them from the ice water and pat them dry with a paper towel. Place them in an airtight container and put in the freezer.
Zucchini will stay fresh in the freezer for up to one year. If you plan to use it within six months, it will retain its flavor and texture. If you have frozen zucchini that is more than six months old, you can still use it, but the flavor and texture may be slightly compromised.
Zucchini is a versatile vegetable that can be used in a variety of dishes. It is particularly popular in the summer when it is in season.
The benefit of freezing zucchini is that you have an easy-to-use, nutritious vegetable at your disposal, ready to be used in any dish you choose.
How to store zucchini
Wash and dry your zucchini. You can store it with or without the peel, but if you do remove it, take extra care not to cut too deep and remove the flesh along with the skin.
Slice up your zucchini. You can slice it any way you’d like, but the most common ways to slice zucchini for the freezer are to cut it into coin-shaped rounds or to cut it in half lengthwise.
Place the zucchini slices on a parchment-lined baking sheet and put it in the freezer.
Once the zucchini has been in the freezer for at least an hour or two, transfer the slices into a freezer bag.
When you’re ready to use your zucchini, remove as many slices as needed from the freezer bag and allow them to thaw in the refrigerator. You can then use the thawed zucchini in baking or to make zucchini noodles.
From garden to freezer, zucchini is a great vegetable to freeze. It’s simple and painless, and you can use frozen zucchini in a variety of recipes.
Once you’ve got your own frozen stash of zucchini, you won’t need to buy it at the supermarket again.
How to prepare zucchini
If you cook a lot of zucchini, you can prepare and freeze some of it for use in the winter. Grate the zucchini, pack it into freezer bags, and freeze it for use in soup, bread, or as an ingredient in other recipes. This will prevent the zucchini from taking up a lot of space in your freezer and keep it from going bad if you have too much to use in a short period of time.
If you love zucchini bread, grating and freezing the zucchini is a great way to save a step when baking. Use a larger-holed grater if you plan to use the zucchini in bread or muffins. Grate the zucchini and squeeze the liquid out of it with a clean kitchen towel and freeze it in freezer bags. Just be certain that you squeeze out all of the liquid because that can affect the texture of your baked goods.
Zucchini is a great substitute for ricotta cheese. Grate the zucchini and drain it while you prepare the rest of the ingredients for the recipe. Then, you can substitute the grated zucchini for the ricotta in the recipe.

When the temperatures start to dip, it might feel like there is no way to use up all your summer produce. But when it comes to zucchini, the freezer can actually be your friend. Shredding and freezing it is a great way to keep the taste of summer on hand well into the holidays.
Grating and freezing zucchini is a great way to make sure you always have some on hand for your favorite recipes. But you don’t have to wait for your zucchini plants to start producing to reap the benefits of freezing. When zucchini is in season, it is often sold at a great price at your grocery store or farmer’s market. So, stock up and shred away! It’s a great way to enjoy the taste of summer in the coldest months.
freezer zucchini Buying Guide
Cleaning the freezer is not usually on the top of the to-do list. But with a fuller-than-usual freezer after a big grocery shopping trip, it may be time to make room for those frozen pizzas you know you will need for late-night study sessions (or just for lazy nights when you want a hot meal without going out). The best way to tackle this task is to start with the oldest items.
The first place to look is the back of the freezer. It tends to gather the most dust and debris, which can taint the flavor of your food. If you see a pile of ice or frost on the back of the freezer, there is probably a clog in the drain. The good news is that most clogs can be cleared without professional help. Remove the drain cap and use a wire hanger or a thin bottle brush to push the clog through the drain.
