How to make twice baked potatoes
One of my favorite side dishes to make is twice-baked potatoes, so I am excited to partner with Hass Avocados today to share my favorite recipe! These are the perfect side dish for so many dinners, and are great for parties and entertaining. I often make a double batch and freeze one pan for a busy weeknight meal.
This recipe can be made ahead and kept in the fridge until ready to bake. Just add about 10 minutes to the bake time.
How to cook the potatoes
1. Preheat oven to 400 degrees F.
2. Wash the potatoes well and dry.
3. Poke holes in the potatoes with a fork.
4. Rub the potatoes with olive oil and sprinkle with salt.
5. Place in the oven and bake 50-60 minutes, or until potatoes are cooked through. Remove from the oven.
6. Allow to cool for at least 30 minutes before you handle them.
How to fill the potatoes
1. Cut the potatoes in half. Use a spoon to scoop out the flesh. Leave a thin layer of flesh on the skin so they will hold their shape.
2. Place the potato flesh into a mixing bowl. Add the milk, butter, sour cream, bacon, 1/2 cup of cheddar cheese, salt, and pepper.
3. Use an electric mixer to mix until smooth.
4. Spoon the mixture back into the potato skins.
5. Top with the remaining cheddar cheese.
6. You can cover with plastic wrap and store in the fridge up to 1 day before baking.
7. Preheat oven to 400 degrees F.
8. Bake 25 minutes until the cheese is melted and the potatoes are heated through.
How to freeze twice baked potatoes
In a large bowl, beat cream cheese, sour cream, salt, and pepper until smooth. Stir in bacon, cheddar cheese, and scallions. (If making ahead, refrigerate filling overnight.)
Remove potatoes from the oven and let them cool for 10 minutes, or until you can handle them. Cut potatoes in half lengthwise and use a spoon to scoop out the insides, leaving a ¼-inch-thick shell. Arrange shells on baking sheet.
Bake potatoes until filling is heated through, 35 to 40 minutes. Sprinkle with chives, if desired.
Make Ahead Tip: You can bake the potatoes up to 24 hours in advance. Store in the refrigerator until ready to use. Let come to room temperature before filling.
Tip: If you’re not a fan of cream cheese, you can substitute a different dairy product like Greek yogurt or sour cream. Just make sure to mix in a tablespoon or two of milk to get a creamy consistency.
How to bake twice baked potatoes
Bake potatoes at 400° for one hour or until tender. Cool slightly. Cut a thin slice off the top of each potato; discard slice. Scoop out pulp, leaving a 1/4-in. shell (discard potato pulp or save for another use). In a large bowl, mash the pulp. Add cheese, butter, salt and pepper. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Cover and freeze until firm. Remove from the freezer 30 minutes before baking.
Preheat oven to 350°. Uncover potato mixture; top with bacon. Bake, uncovered, 35-40 minutes or until heated through.

Melt-In-Your-Mouth Twice Baked Potatoes

Ingredients
6 large russet potatoes, scrubbed but not peeled
1 stick (1/2 cup) butter
1/2 cup half-and-half
3/4 cup chopped fresh chives
Additional salt and ground black pepper, to taste
Directions
1. Preheat oven to 400 degrees. Poke each potato all over with a fork then rub with 1 tablespoon oil and season generously with salt and pepper. Roast on a baking sheet until very tender, 50 to 60 minutes. Let cool slightly.
2. Cook bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Drain on a paper towel-lined plate. Wipe skillet clean then melt butter in same skillet over medium heat. Add half-and-half and cook until thickened, 2 to 4 minutes. Remove from heat, stir in 3/4 of chives and season with salt and pepper.
3. Slice potatoes in half lengthwise. Scoop out flesh with a spoon, leaving 1/4-inch border around the edge. Put flesh in a medium bowl then mash with a potato masher until smooth. Add half-and-half mixture and stir to combine.
4. Fill each potato skin with the mashed potato mixture, mounding slightly at the center. Sprinkle with remaining chives. Bake at 400 degrees until heated through, 8 to 10 minutes. Serve with bacon.
